Sage Mortimer grew up in Springville, Utah, and wrestled on the boys' team at American Leadership Academy in Spanish Fork. In July 2018, entering her sophomore year, she won the 16U women's freestyle title at 100 pounds in Fargo. In 2019 she won both the 16U and Junior titles at 100 pounds, pinning Rayana Sahagun of Michigan in 34 seconds in the Junior final. At the Cadet Worlds that summer she lost 10-6 to Serena DiBenedetto of Canada. On February 17, 2021, she pinned Donna Wright of Maple Mountain at 115 pounds in Utah's first sanctioned girls' state tournament. That July she won her fourth Fargo title, in the Junior division at 112 pounds, 12-7 over Samara Chavez of Texas.

At King University she placed third at 116 pounds at the 2022 NCWWC championships and second at 109 in 2023, losing the final by fall to Emily Shilson of McKendree. She then took a year off from college to train in freestyle at 50 kg, about 110 pounds. In December 2023 she won the U.S. Senior Nationals at 50 kg in Fort Worth, beating Chavez 12-10. At the 2024 Olympic Team Trials she lost 10-6 to Audrey Jimenez in the challenge tournament final and placed third.

She transferred to Grand Valley State. On October 24, 2024, in Tirana, Albania, she won the U23 World title at 50 kg. She pinned Umi Ito of Japan from 6-0 down in the semifinal, then beat Natalia Pudova, an Individual Neutral Athlete, 7-5 in the final. In March 2025 she went 24-0 and won the NCWWC national title at 110 pounds over Chavez, 11-7. In 2026 she reached the first NCAA women's final at 110, where Jimenez of Lehigh pinned her at 1:50. She finished 96-8 at Grand Valley.

She still competes at 50 kg for the Titan Mercury Wrestling Club and won the U23 Pan American title in Lima in June 2026.
