Jaslynn Gallegos grew up in Brighton, Colorado, started wrestling at five and earned three varsity letters on the boys team at Skyview High School. As a senior in February 2019 she placed fifth at 106 pounds at the Colorado 3A boys' state tournament in Denver. She and Angel Rios of Valley were the first girls to place in a CHSAA boys tournament.

Her run drew national attention when an opponent, Brendan Johnston, declined to wrestle either girl. NPR interviewed Gallegos about it that March, and she said she wanted to be known as a wrestler, not a girl wrestler. She was a two-time Colorado girls' state champion and Colorado's 2019 Tricia Saunders High School Excellence Award winner.

At Presbyterian College she went 25-3 as a freshman and took the WCWA national title at 116 pounds, which sent her to the U.S. Olympic Team Trials. She was fourth at the first National Collegiate Women's Wrestling Championships that season, the one year the two bodies ran separate national meets, and third at the NCWWC in 2021. That August, at the Junior World Championships in Ufa, Russia, she placed fifth at 53 kg, about 117 pounds.

She transferred to North Central College. At the 2023 NCWWC in Cedar Rapids she technical-falled Payton Stroud of McKendree 10-0 in the semifinals, then fell behind Samara Chavez of King 8-1 in the final and pinned her for the 116-pound title. She helped lead North Central to the first team national title in the program's women's wrestling history. She finished college 93-13 with 57 falls and graduated in 2024 with a psychology degree.

She joined the North Central coaching staff in the summer of 2024 and kept wrestling. She won a bronze medal at 53 kg at the 2025 Senior Pan American Championships. She competes for the Cardinal Wrestling Club and was third at the 2026 Senior World Team Trials Challenge Tournament in Louisville.
